Description
"Fabius" is a country restaurant complex, which includes its own cheese factory, ecological greenhouse and bakery. The house is located near the metro station "Vydubychi" on the Moscow highway. Interior is designed in the style of American loft: beveled roofs, panoramic windows, natural wood and metal in decoration, as well as blue-grey colour scheme. There are five halls in the restaurant. "Fabius" is a country restaurant complex, which includes its own cheese factory, ecological greenhouse and bakery. The house is located near the metro station "Vydubychi" on the Moscow highway.

Interior is designed in the style of American loft: beveled roofs, panoramic windows, natural wood and metal in decoration, as well as blue-grey colour scheme. There are five halls in the restaurant.

There is a ground floor with spacious main hall, which contains fireplace, contact bar, aquarium with lobster and the pride of the house: two wine cupboards.

The second floor is occupied by three halls with two terraces: panoramic and summer. Visitors can see fountain and stage from the panoramic terrace. It is surrounded by hydrangeas and is flooded with light thanks to large windows. There are gazebos for the company, small secluded arbours and stage on the summer terrace. Visitors can go to the children`s playground from the terrace in the open air.

Menu contains Italian cuisine dishes, cooked by chef. Ten kinds of cheese are produced here, on its own cheese factory: mozzarella, burat, stratocella, smoked scamorca, ricotta, affumikato with woody aroma, creamy mascarpone, kachotta, kachochavallo. Ciabatta, potato bread from wheat flour, cereal with whole grains, grissini, focaccia with rosemary, pesto sauce and parmesan cheese, baked mozzarella cheese, sun-dried tomatoes and olives are baked here.

Menu dishes are cooked in show kitchen with tomatoes, cucumbers, lettuce, greens, microgreen, grown in its own greenhouse. Pasta is made by hand. Steaks are cooked from meat of black angus and from meat, supplied by Ukrainian farmers. The dough for special pizza is cooked from special grades of flour, and baked in the open kitchen.

Specialties of the house are:

  • pappardelle with white mushrooms,
  • tagliatelle with cuttlefish ink and seafood,
  • spaghetti carbonara,
  • rack of New Zealand lamb with potato gratin,
  • baked rabbit with young potatoes and spinach,
  • chicken with vegetables and truffle paste.

Extensive dessert menu includes author's treats from chef:

  • cheesecake,
  • brownie,
  • warm mousse of tapioca with mango and coconut.

Alcoholic menu has fine wines from Italy and the New World, sommelier helps to choose it. The wine cabinet of the restaurant contains more than 500 items.
